Adzuki Botanical name: Vigna angularis
Adzuki beans are a typical red- brown/ maroon bean shape with white eyes. This bean is native to East Asia and the Himalayan region, and is reported to have a high protein and relatively low fat content. They are reported to aid in the management of diabetes, optimize digestion, contribute to growth and repair, increase energy, lower blood pressure and detoxify the body.
Nutritional Value: This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Phosphorus, Potassium and Copper, and a very good source of Dietary Fibre, Folate and Manganese.
Chickpeas Botanical name: Cicer Ariertinum
Also known as Garbanzo beans they are irregular, round, tan, coloured seeds which have a delicious nutlike taste and a texture that is buttery, yet somewhat starchy and pasty. A very versatile legume, they are a noted ingredient in many Middle Eastern and Indian dishes such as hummus, falafels and curries. Chick peas are a legume and therefore contain certain anti-nutrients, but sprouting neutralizes this.
Nutritional Value: They are protein and carbohydrate rich with relatively low calories, low in Saturated Fat, and very low in Cholesterol and Sodium. They are also a good source of Dietary Fibre, Protein and Copper, and a very good source of Folate and Manganese.
Green Peas Botanical name: Pisum Sativum
Green Peas are a typical pea size, pale green seed, which also grow into an excellent microgreen.
Nutrional Value: Low in Saturated Fat, Cholesterol and Sodium, a good source of Protein, Vitamin A, Riboflavin, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fibre, Vitamin C, Vitamin K, Thiamin and Manganese.
Mung Beans Botanical name: Vigna Radiata
Mung beans are small and green with a typical bean shape. These are the most well known and commonly used sprouting seeds, they are a frequently used ingredient in Chinese cuisine and can be eaten fresh or cooked. They have a wonderful crunchy texture and mild flavour that is similar to peas. To get a thicker sprout, similar to commercially grown ones, use a bottom draining sprouter, or colander with damp cloth over, and do not disturb the growing sprouts until ready.
Nutritional Value: Low in Saturated Fats and Sodium, very low in Cholesterol, and a good source of Protein, Thiamin, Niacin, Vitamin B6, Pantothenic Acid, Iron, Magnesium, Phosphorus and Potassium, also a very good source of Dietary Fibre, Vitamin C, Vitamin K, Riboflavin, Folate, Copper and Maganese. However a large portion of the calories in this food come from sugars.
Peanuts Botanical name: Arachis Hypogaea Also known as Groundnuts, they are legumes, not nuts.
Peanuts are a large, white, oval, red skinned seed. Peanut Sprouts are crunchy and sweet after only 3 days, but don't let them get leafy or they become bitter. By sprouting legumes you neutralize phytic acid and lectins.
Nutrition: This food is low in Sodium, and very low in Cholesterol. It is also a good source of Niacin and Manganese.
Sunflower Botanical name: Helianthus annuus
Sunflower is a de-husked, creamy grey, oval seed. They are super fast sprouters and can be eaten within 2 days, or later if you prefer more of a leaf, thereby making it an excellent choice for microgreens.
Nutritional Value: Very low in Cholesterol and Sodium. It is also a good source of Thiamin, Vitamin B6, Magnesium, Phosphorus, Copper, Manganese and Selenium, and a very good source of Vitamin E (Alpha Tocopherol).
Wheatgrass Botanical name: Triticum aestivum
Wheat kernels are typical brown grass seeds. When grown as a microgreen and juiced, it is claimed to be a shot glass of health, stimulating circulation, improving digestion, relieving arthritis and reducing fatigue to name but a few of its benefits. Grown as a micro green to harvest for juicing for which a special juicer will be required.
Nutrional Value: A good source of Protein and Potassium, and a very good source of Dietary Fibre, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Niacin, Vitamin B6, Pantothenic Acid, Iron, Zinc, Copper, Manganese and Selenium.
